Match the pan's diameter to the hob burner: a 28 cm frying pan holds breakfast for the whole family, while a small one is for an egg or two. With pots, height and capacity matter for soups and boiling, and a glass lid lets you see the food without lifting it. A pan with a removable handle can also go in the oven, if the manufacturer allows it. A set works out better value than single pots if you are equipping a kitchen from scratch.
